The Bondi Sunshine (Limoncello Martini)

The Bondi Sunshine (Limoncello Martini)

How to Make a Limoncello Martini

Bright, zesty and a little bit sweet, the Bondi Sunshine is a Bondi summer in a glass. It’s our marketing manager Emily’s favourite, and it’s the one martini we always shake.

“It tastes like a Bondi summer” — Emily, Marketing Manager

Ingredients

• 45ml Bondi Vodka
• 20ml Bondi Liquor Co Limoncello
• 10ml fresh lemon juice
• Caster sugar and a lemon wedge, for the rim
• Thin lemon wheel, to garnish

Method

  1. Run a lemon wedge around half the rim of your glass and dip it in caster sugar.
  2. Chill the glass.
  3. Add the vodka, Limoncello and lemon juice to a shaker filled with ice.
  4. Shake hard for 10–15 seconds.
  5. Fine-strain into the sugared glass.
  6. Float a lemon wheel on top.

Why shake this one?

Citrus needs air. Shaking adds texture and brightness, giving the drink a lively, fresh finish. That’s why the Bondi Sunshine breaks the “stir, don’t shake” rule.

Tips

  • Sugar half the rim so every sip can be sweet or tart.
  • Use fresh lemon juice, never bottled.
  • Want it sweeter? Add 5ml of sugar syrup.

Why our Limoncello?

Our Limoncello was named Gold and Best in Competition at the IWSC 2025, with 95 points. It brings real lemon flavour and natural sunshine to this martini.
