Meet Adrian

Founder, Spirit Maker, Bondi Convert

Originally from Adelaide, Adrian came to Bondi for the surf and sunshine, and ended up finding something even better: a love for the place, the people… and his wife.

What started as a sea change turned into a passion project, and then into Bondi Liquor Co. A longtime hospitality pro and gin enthusiast, Adrian dreamed of creating a space that felt like Bondi in a bottle: fresh, relaxed, full of good energy.

He’s the driving force behind everything we do, from our first batch of spirits to the vibe you feel when you walk through the door. Whether he’s tinkering with botanicals or chatting with locals at the bar, Adrian’s all about keeping things real, local, and seriously good.

Meet Connor

Head Distiller & Recipe Wizard

Connor’s the guy behind the still, and the reason our spirits taste as good as they do. Equal parts scientist and creative, he’s the genius who turns raw ingredients into liquid gold, one bold recipe at a time.

Whether he’s experimenting with unexpected botanicals or perfecting a classic gin with a Bondi twist, Connor brings serious skill and just the right amount of madness to the mix. He’s always pushing boundaries, always chasing flavour, and always up for creating something new (and delicious).
